VEGAN SWEET POTATO BROWNIE
Servings: 12 - Prep Time: 3mins - Cooking Time: 20mins
2 sweet potatoes, boiled or steamed
2 cups of ground almonds
5-6 tbsp cocoa powder
A pinch of salt
1/2 cup of coconut sugar
toppings, I used 3 halved figs
Pre-heat the oven to 180 degrees Celcius or 356 degrees Fahrenheit.
Mash the sweet potatoes in a bowl.
Add all the ingredients apart from toppings, mixing very well.
Oil a tray with butter or coconut oil.
Transfer the mixture and top it up with your toppings.
Bake for 20mins.
