VEGAN SWEET POTATO BROWNIE



Servings: 12 - Prep Time: 3mins - Cooking Time: 20mins



Ingredients:

  • 2 sweet potatoes, boiled or steamed

  • 2 cups of ground almonds

  • 5-6 tbsp cocoa powder

  • A pinch of salt

  • 1/2 cup of coconut sugar

  • toppings, I used 3 halved figs


Directions:

  1. Pre-heat the oven to 180 degrees Celcius or 356 degrees Fahrenheit.

  2. Mash the sweet potatoes in a bowl.

  3. Add all the ingredients apart from toppings, mixing very well. 

  4. Oil a tray with butter or coconut oil.

  5. Transfer the mixture and top it up with your toppings. 

  6. Bake for 20mins.
