The most delicious lemon cake | super easy recipe
Trust me when I say that this is the most delicious lemon cake that you will ever eat! It is fluffy, and so easy to make from scratch. My husband loves it! Every bite is bursting with fresh lemon flavor. You do not need to worry about additional glaze because it is incredible without it, making the preparation much easier and quicker.
The batter contains freshly grated lemon zest and lemon juice and requires only a few ingredients, specifically 9! I love the combination of lemon and poppy seeds. I love it so much that I have another recipe with these ingredients, my highly popular lemon muffins with chickpea flour, which is gluten free and refined sugar free.
Kitchen utensils you will need:
Prep Time: 10 mins - Cooking Time: 60 mins - Servings: 12 portions
2 cups or 240g flour all purpose flour
1 cup or 190g brown sugar
1 tsp of baking powder
1 tsp of baking soda
2 tbsp of poppy seeds
zest from 1 lemon
1/4 cup or 60ml juice from 1 lemon
3/4 cups or 180ml soda water
1/3 or 60ml melted oil or butter or margarine
oil to oil the baking tray
In a bowl mix all the dry ingredients - flour, brown sugar, baking powder, baking soda, poppy seeds and lemon zest.
In another bowl mix all the wet ingredients - lemon juice, soda water, eggs and margarine.
Transfer the mix of the dry ingredients into the bowl with the wet ingredients and whisk well to create a nice batter.
Oil a baking tray. I used coconut oil to oil my baking tray but you can use olive oil, butter or any vegetable oil of your preference.
Transfer the batter in the baking tray.
Place the baking tray in the oven and leave to bake for 60mins at 180 degrees Celsius or 356 Fahrenheit. You do not have to preheat the oven but if you do, you will bake the cake for 10 less minutes.
Test if ready with a toothpick. Insert a toothpick into the cake if it comes clean it is ready!
