SWEET POTATO BASE PIZZA | HEALTHY PIZZA
Prep Time: 10 mins - Cooking Time: 20-25 mins
1 1/5 sweet potatoes, boiled
250 grams whole grain flour
2 tbsp flax seeds
4 tbsp water
1 tsp dried oregano
1 tsp turmeric
1 tsp dried sage
coconut oil for greasing
2 tbsp hummus
2-3 mushrooms, cut in slices
6 cherry tomatoes, halved
a handful of rocket
1 tbsp olive oil
Preheat the oven to 180 degrees Celcius or 350 degrees Farenheit
Mix flax seeds with water for approximately 20mins
Mash your boiled sweet potatoes.
Add the rest of the base ingredients including the flax seed in water, mixing until well combined.
Oil your tray with coconut oil and spread the dough onto it.
Spread the hummus on the base, add the mushrooms and cherry tomatoes and the eggs on top.
Bake the pizza for 20 to 25mins.
Before servings top it up with a handful of rocket and sprinkle olive oil on top.
