SAVOURY PORRIDGE: Porridge with Grilled Asparagus, Poached Egg and Avocado.


I know that savoury porridge may sound strange but trust me you will love it!


Servings: 1 - Prep Time: 2 min - Cooking time: 15 minutes


Ingredients:

  • 1/4 cup of oats

  • 1 cup in of non-dairy milk

  • 1/3 avocado, sliced

  • 4 asparagus, grilled

  • 1 poached egg

  • crushed pistachios

  • salt & pepper


Directions:

  1. Oil a tray, place the asparagus and bake for 10 to 15 minutes at 180C.

  2. In a saucepan, bring water to boil and while swirling the water, pour in the raw egg to poach, or hard-or soft- boil an egg. For more details, check here on how to poach an egg.

  3. When the egg is ready, put the oats in a saucepan, pour in the milk and bring to the boil. Simmer for 3-5 minutes, stirring from time to time and watching carefully that it doesn’t stick to the bottom of the pan.

  4. In a dish serve the oatmeal with asparagus and sliced avocado, place the egg on top, season and sprinkle the crushed pistachios on top.
