Peanut Butter Baked Aubergines


This peanut butter baked aubergine recipe is something that I make weekly to increase the fiber intake in my household. Fiber is an incredibly important part of your diet, it helps your digestion, feeds “good” gut bacteria and helps normalising your insulin response to food, keeping you satiated for longer, it also contains nutrients important for our body’s function.

Prep Time: 2 mins - Cooking Time: 40mins - Servings: 4

Ingredients:

  • 2 aubergines

  • 2 tbsp of peanut butter

  • 2 tbsp of olive oil

  • salt

  • pepper


Directions:

  1. Pre-heat the oven at 180 degrees Celsius.

  2. In a bowl mix the peanut butter and olive oil until unified.

  3. Cut both aubergines in half lengthwise. You should have four pieces.

  4. Slice lightly the top of the aubergine so that the peanut butter sauce can go inside as well.

  5. Oil a tray and add the aubergine pieces on the tray.

  6. Spread the peanut butter sauce on the aubergines.

  7. Add in the oven and cook for 40 minutes.

  8. Enjoy the aubergines as a side with your mains or as a snack.
