This is an incredibly delicious falafel recipe. It is slightly different to the traditional ones you may be used to. These ones contain lots of greens and you can eat them with a salad or within a pita or a tortilla with any other ingredients. These also go well with tahini, lemon and yogurt.

Servings: 20 falafels - Prep Time: 15 mins - Cooking Time: 20mins

  • 1 cup of soaked overnight chickpeas

  • 1 small or medium onion, roughly chopped

  • 1 large bunch parsley, roughly chopped

  • 2 baby onions (scallions), roughly chopped

  • 1 small green pepper

  • 2 garlic cloves

  • 1 tsp cumin

  • 1 tsp salt

  • 1/2 tsp turmeric

  • 1/2 tsp black pepper

  • 1 tbsp olive oil

  • olive oil to spray on the oven pan

  1. Drain and rinse the chickpeas and add them to your food processor.

  2. Add the onion, parsley, baby onions, pepper, garlic, cumin, salt, olive oil and black pepper to the food processor and pulse several times until it resembles the texture of coarse sand.

  3. Place a baking sheet on an oven pan and oil it.

  4. Shape 20 balls and then press on them when on the pan.

  5. Once the falafel are formed, bake them for 20mins at 180 Celcius, 10mins on one side and 10mins change their side.

  6. Serve the falafel as you please.
