This recipe has been created in collaboration with Yiayia's box, which is a monthly subscription box that bring Greek treats to your door.

Fitoura are traditional dessert pieces of Zante made from semolina. You can find it in various shops on the island. Fitoura are served with some sugar. I have adjusted this recipe and used coconut sugar instead. I have also spread some crushed nuts to add healthy fats for blood sugar management.


Servings: 10 pieces - Prep Time: 2 mins - Cooking time: 20 minutes



  • 250 grams semolina

  • 750ml water

  • 1 pinch of salt

  • 1 pinch of cinnamon

  • 1 pinch of coconut sugar

  • 1 pinch of crushed nuts

  • Zest from one orange

  • Olive oil for frying


  1. In a saucepan add the water and salt and bring to boil.

  2. When the water boils, add the semolina and stir continuously with a wooden spoon.

  3. When it thickens, take it out of the fire.

  4. Oil a baking tray, approximately 20x20cm, and pour in the thickened semolina.

  5. Spread evenly the cooked semolina and leave it to cool down and stabilise for approximately 12 hours.

  6. Cut the cooked semolina into square pieces.

  7. Oil a pan and warm it up over a medium fire.

  8. As soon as it is warm, add the pieces and fry for 5–6 minutes on each side until a golden crust is created.

  9. Sprinkle cinnamon, sugar and orange zest on top.

  10. Serve and enjoy!
