I promise you will love this recipe! This is a delicious garden couscous salad packed with all the natural goodness. You can either eat it as a side with your main dish or you can add a protein on top such as chicken, egg or tofu, as well as, an avocado and make it your main meal.


Servings: 4 - Prep Time: 5 mins - Cooking Time: 10 mins



  • 1 cup of couscous

  • 2 cups of boiled water

  • 1 tbsp of vegetable stock powder

  • 1 cup of chickpeas, cooked

  • 1 cup of black eyed beans, cooked

  • 2 medium tomatoes

  • 1 red bell pepper, diced

  • 1 yellow bell pepper, diced

  • 1 baby onion, sliced

  • 2 handful of parsley, chopped

  • 1 lemon, cut in 4 pieces

  • olive oil

  • salt

  • pepper


  1. In a deep dish, add your couscous and a tbsp of your vegetable powder. Then cover them with two cups of boiled water and leave it aside for approximately 10 minutes or until the couscous has absorbed all the water.

  2. In the meantime, you can dice, chop and slice your veggies.

  3. Mix in all the ingredients apart from lemon and olive oil.

  4. Serve and enjoy with a fresh piece of lemon and olive oil.

  5. If you want to make it a main meal, then add your protein such as chicken, egg and your healthy fat such as 1/2 avocado, although olive oil should be enough on its own as well.
