Prep Notes

I have to say that I love this recipe. Quinoa is something I have been adding slowly into my diet in order to benefit from all its goodness. This is one of the ways I managed to get it work for me. 

A couple of notes for this recipe -  

  1. You can replace water with additional milk, dairy or non-dairy, whatever is your preference. 

  2. If you do not have a vanilla pod, use vanilla extract or skip using it altogether.

Prep Time: 5 mins - Cooking Time: 25 - Servings: 2



  • 100g quinoa

  • 1 chopped banana

  • 1 grated apple

  • 1 vanilla pod

  • 1tsp cinnamon

  • 1tbsp flaxseeds

  • 1tbsp honey

  • 200ml coconut milk

  • 150ml water

  • 1tbsp almond butter


  1. In a pan, add quinoa in the water and bring it to boil.

  2. Then reduce the heat and leave to cook for 10 more minutes.

  3. Add the rest of the ingredients in the pan but honey.

  4. Cook for another 5 minutes.

  5. Serve in dishes with honey or any other sweetener you like.
