Buckwheat Salad Recipes | Super Salads
Mustard and extra virgin olive oil salad dressing with five ingredients, and one optional :). Enjoy this with your salads or the buckwheat super salad.

Ingredients:
1 cup of buckwheat, rinsed
Mushroom & Spinach Buckwheat Salad
1 garlic cloves, grated
1 onion, sliced
1 tomato, diced
1/2 yellow bell pepper, diced or sliced
2 cups mushrooms, diced
3 cups of spinach, chopped
50 grams feta, crumbled
1/2 cup of parsley, chopped

extra virgin olive oil for the pan
Turmeric Infused Onion Buckwheat Salad
1 garlic cloves, grated
1 onion, sliced
1/2 cucumber, diced
1/2 yellow bell pepper, diced or sliced
1 tsp of sesame seeds
1/2 tsp chilli flakes (optional)
salt
pepper
1 tsp of turmeric
extra virgin olive oil for the pan
Dressings:
Directions:
Add a pan in medium heat, sprinkle some olive oil and add 1 cup of buckwheat and 2 cups of water.
Cook until the water is fully absorbed, which takes approximately 15 minutes.
Mushroom & Spinach Buckwheat Salad
In a pan add the onions and garlic, cook for a couple of minutes in medium high heat.
Add the mushrooms and the spinach and cook for 10 more minutes.
When ready, assemble your salad.
Combine on a plate buckwheat, mushroom & spinach mix, tomatoes, crumbled feta, yellow bell pepper and parsley.
Pour over the mustard & olive salad dressing and enjoy!
Turmeric Infused Onion Buckwheat Salad
In a pan, sprinkle some olive oil, turmeric and pepper.
Mix the ingredients for a few seconds to release the flavours and the sliced onions and garlic, leave to cook for 5 minutes.
When ready, assemble your salad.
Combine on a plate buckwheat, turmeric infused onions, cucumber, yellow bell pepper, sprinkle sesame seeds and chilli flakes (if you choose to).
Pour over the tahini salad dressing and enjoy!
