Prep Time: 2 mins - Cooking Time: 25 mins - Servings: 6 muffins



  • 150grams brown rice flour or whole grain flour

  • 1tsp cinnamon

  • 1/2tsp bicarbonate soda

  • 50grams coconut sugar

  • a pinch of salt

  • 1 egg

  • 120ml almond milk or any other type of milk (dairy or plant-based)

  • 60grams blueberries

  • coconut oil or butter for oiling the tray

  • additional coconut sugar and cinnamon for topping


  1. Pre-heat the oven to 175 degrees celsius or 347 degrees farenheit.

  2. Add all the ingredients in a bowl and stir the mixture very well until all ingredients are combined. 

  3. Oil your muffin tray and fill each muffin cup halfway (during the baking process the muffins will rise).

  4. If you want to, you can sprinkle a little bit of cinnamon and coconut sugar on your muffins. 

  5. Place the muffin tray in the oven and bake for 25 mins.
