Baked Chicken with Barley and Cauliflower Rice

This recipe is specifically designed to up the fiber intake of my fiance's favourite meal. He really enjoys eating baked chicken with barley so without taking the pleasure I just sneak some cauliflower and carrot in. He still enjoys eating and it is a bit more healthier for him.


Prep Time: 10 mins - Cooking Time: 40 mins - Servings: 4



  • 4 chicken portions (whatever part of the chicken you prefer). When we were filming this recipe we had 4 chicken breasts.

  • 1/2 cauliflower head

  • 1 cup of barley

  • 3 cups of water

  • turmeric

  • paprika

  • 2 tbsp of olive oil

  • olive oil to sprinkle on the tray

  • salt

  • pepper

  • oregano (optional)


  1. Pre-heat the oven at 180 degrees Celsius.

  2. Sprinkle some olive oil in a tray.

  3. Add barley in the tray and the cauliflower rice. In order to create the cauliflower rice, add pieces of cauliflower in a blender and blend for a few seconds until rice form is formulated.

  4. Sprinkle with turmeric and paprika.

  5. On top, add the chicken portions.

  6. Season and optionally sprinkle some oregano.

  7. Bake for 40 mins

  8. Enjoy!
