Kefir Pancakes & Mint Nettle Tea

 

I have an incredible mother. I always learn from her and every time she comes to visit me in London I am extremely happy as I get a chance to be spoilt and having her share her wisdom with me.

 

The last time she paid me a visit, she taught me how to make delicious pancakes using kefir and a DIY mix of nettle and mint tea.

 

As soon as she arrived in London, she excitedly mentioned a crepe recipe she discovered and that everyone in the family have been loving including my little nieces. Apparently, since she started making them, the family haven’t gone back to the previous crepe recipe. The only thing she’s done was to replace the milk with kefir but it made such a difference! The crepes were more puffy, more filling and a lot more delicious.

 

And trust me, I am definitely not going back to the previous crepe recipes either.

 

 

KEFIR CREPES

 

Ingredients:

  • 4 eggs (room temperature)

  • 2 cups of kefir (room temperature)

  • 1 tsp baking soda

  • ½ tsp salt

  • 1 tbsp olive oil

  • 1 cup of all purpose flour or whole grain flour or buckwheat flour

Method:

  • Add all the ingredients into a mixing bowl and whisk until smooth.

  • Heat a non stick pancake pan on med/high with a small amount of coconut oil or olive oil.

  • Pour the batter into the pan trying to get a thin even layer by tilting the pan

  • Cook for a couple minutes each side until lightly browned. Use a spatula to turn making sure to be careful as they are fragile.

 

While she stayed with me in London, we started experimenting with dehydrating leaves from herbs to drink as tea. I am a massive fan of herbal teas and especially of nettle. When my mum was around we would buy mint to use while cooking and dehydrate the leftover. We would also collect nettle from parks, leave them to dry for a few days and then boil them in water. Both mint and nettle have many beneficial properties which not only contribute to prevention of various diseases but also have anti-inflammatory properties.

 

MINT & NETTLE TEA

 

 

Ingredients:

  • Fresh nettle leaves

  • Mint leaves

Method:

  • On newspaper sheets, let the leaves of mint and nettle to dry & get dehydrated.

  • This process takes 5-7 days.

  • To enjoy, use a couple of nettle and a couple of mint leaves and boil in a cup of water.

  • The mix is delicious as is or can be enjoyed with a bit of honey or maple syrup.
