Cinnamon has been around for thousands of years. It has been used as a perfuming agent by Egyptians, it was mentioned in the Old Testament as an ingredient in anointing oil and it was really popular in Europe when brought by Arabs because of its ability to enhance the flavour of any dish. Cinnamon is also used as a preservative for meat and in some cases for bakery products.
Cinnamon is loaded with antioxidants, has anti-inflammatory properties, lowers blood sugar levels and helps fight bacteria and fungal infections (healthline.com). Because of health promoting traits, cinnamon can be used to improve digestion and blood circulation, strengthen the heart, prevent heart attacks and treat colds and flu.
There are two types of cinnamon that we encounter today, Ceylon and Cassia cinnamon. Ceylon is the type of cinnamon that is known as "true" cinnamon, it is of a higher quality to Cassia and also a bit sweeter. Cassia is the more popular variety that we find today and it is less expensive than Ceylon.
