VEGAN BANANA BREAD

Servings: 10 - Prep Time: 5 mins - Cooking Time: 40-45 mins



Ingredients:

Dry Ingredients

  • 2 tbsp flax seeds

  • 1 1/2 cups whole-grain flour

  • 4 tbsps coconut sugar

  • 1/2 cup rolled oats or spelt flakes

  • 1 tsp cinnamon

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1/2 tsp sea salt

Wet Ingredients

  • 1.5 big bananas, ripped

  • 1/3 cup of almond milk

  • 1/3 cup of coconut oil or butter, melted

  • 2 tsps vanilla extract

Topping - 1 banana, sliced for decoration


Directions:

  1. Pre-heat the oven to 180 degrees Celsius or 356 degrees Fahrenheit.

  2. In a bowl, mash the bananas.

  3. Stir the dried ingredients first and then the wet ingredients. 

  4. Mix really well until all ingredients are combined and you get a smooth texture. 

  5. Oil with coconut oil or butter a tray and transfer the mixture.

  6. Slice a banana in half and add it on the mixture.

  7. Place the tray in the oven and leave to bake for 40 to 45 mins.
