Peanut Butter Quinoa Cookies

This is an amazingly delicious quinoa cookie recipe. If you are gluten intolerant and prefer to eat something with natural sweeteners then this is it! These cookies contain, obviously, quinoa which is a protein rich food and contains twice as much fibre as other grains. We will also incorporate peanut butter which is also protein rich and is rich in fat. To sweeten our cookies we will combine frozen bananas, dates and cinnamon.



Ingredients:

  • 1 banana

  • 2 tbsp peanut butter

  • 3 dates

  • 1 tsp vanilla

  • ¼ cup of coconut milk

  • ⅓ cup of cooked quinoa

  • 1 cup of rolled oats

  • 1 tsp of cinnamon


Directions:

1. In a blender, combine very well the banana, peanut butter, dates, vanilla and coconut milk.

2. In a bowl combine all the ingredients.

3. Using a spoon, place the cookie dough on a tray covered in baking paper.

4. Leave them to cook for approximately 20 to 30 minutes to 180 degrees Celsius.

5. Enjoy!
