MASSAGED KALE & ROASTED SWEET POTATO SALAD
1 sweet potato, peeled and cut into small cubes
1 tsp smoked paprika
1/2 lemon juice
1 tbsp pumpkin seeds
1 tbsp goji berries
50g sun-dried tomatoes, finely chopped
50g pitted black olives
3 tbsp olive oil
1 tbsp apple cider vinegar
Preheat the oven to 200 degrees Celcius or 392 degrees Fahrenheit.
In a small bowl mix 1-2 tbsp of olive oil, smoked paprika, and sweet potato cubes.
Place the sweet potatoes on a roasting tray covered with baking paper.
Leave to bake for 45 minutes.
In a big bowl add the kale and top it with lemon.
Using your hands, massage the kale with the lemon for approximately 1 minute.
Add the rest of the ingredients.
Mix and serve.
