MASSAGED KALE & ROASTED SWEET POTATO SALAD

A lovely salad with lemon massaged kale, roasted sweet potato, sun-dried tomato, olives, pumpkin seeds and goji berries topped olive oil and apple cider vinegar. It goes with just about everything. You can eat it as a main or as a side. 



Servings: 2 - Prep Time: 50 minutes- Cooking Time: 45 minutes



Ingredients:

  • 1 sweet potato, peeled and cut into small cubes

  • 1 tsp smoked paprika

  • 100g kale

  • 1/2 lemon juice

  • 1 tbsp pumpkin seeds

  • 1 tbsp goji berries

  • 50g sun-dried tomatoes, finely chopped

  • 50g pitted black olives

  • 3 tbsp olive oil

  • 1 tbsp apple cider vinegar


Directions:

  1. Preheat the oven to 200 degrees Celcius or 392 degrees Fahrenheit.

  2. In a small bowl mix 1-2 tbsp of olive oil, smoked paprika, and sweet potato cubes.

  3. Place the sweet potatoes on a roasting tray covered with baking paper.

  4. Leave to bake for 45 minutes.

  5. In a big bowl add the kale and top it with lemon.

  6. Using your hands, massage the kale with the lemon for approximately 1 minute.

  7. Add the rest of the ingredients.

  8. Mix and serve.
