Easy Raw Dessert // Healthy Christmas Dessert // Raw Vanilla Cake // Raw Dessert


This Christmas include this delicious and extremely healthy dessert recipe in your Christmas table. It is packed with some of the most natural and extremely beneficial nutrients for your body so you can enjoy Christmas quilt-free.


This raw vanilla cake with a chocolate base, topped with raspberries and grated pistachios is super easy to make and you feed your body with healthy fats and antioxidants.


Servings: 8 - Prep Time: 15-20 mins



Ingredients:

Base -

  • 100 grams almonds

  • 8 medjool dates

  • 2 tbsp chia seeds

  • 1 tbsp coconut oil, melted

  • 2 tbsp cocoa powder

  • 1 pinch sea salt

Filling -

  • 2 cups of cashews

  • 1 tsp vanilla extract

  • 100 ml honey

  • 1 tbsp coconut oil, melted

  • 1 banana

  • 80 ml coconut milk (optional)

Toppings -

  • A hanful of raspberries

  • A handful of pistachios, grated


Directions:

  1. Soak the cashews for at least 3 hours or leave to soak overnight.

  2. Blend all the base ingredients in a food processor or a blender until well combined.

  3. Spread it in a deep tray.

  4. Rinse the cashews.

  5. Blend all the filling ingredients in a food processor or a blender until well combined.

  6. Add the filling on top of your base.

  7. Top the cake up with raspberries and pistachios.

  8. Cut the dessert in desired piece and then place it in the freezer for at least 2 hours - if you do not cut the dessert before you put in the freezer, you will have difficulty cutting it later.

  9. Enjoy!
